Most of you know from my previous posts that I am carrying on from the high I received from
Food Wine Conference. This Blueberry Peach Crumble is the creation of said inspiration. I had the pleasure of meeting
Wish Farms, which is a local family-owned and operated produce company here in Florida. I love knowing where our food comes from and these luscious blueberries in this crumble came from a local Florida farm in Plant City. Hurrah! Supporting local farming is a passion of mine and I think we are so lucky to be able to help out by purchasing locally raised products. Summer is just about here and what a fun way to use all this juicy fruit to create a darling dessert.
Start off mixing the fruit, lemon zest, lemon juice, sugar and flour gently in a mixing bowl. You want the fruit to get coated with the citrus and sugar/flour without getting bruised. Once you finish, set the bowl aside for about 5 minutes to let the mixture marinate together.

Then spoon the fruit into a baking dish.

In a mixer fitted with a paddle attachment: add flour, granulated sugar, brown sugar, salt and butter.

Mix on low speed until topping incorporates into small marble sized lumps.

With your hands, mix the crumble into bigger pieces and sprinkle over the fruit.

Bake for 35-40 minutes until the top is browned and the juices are bubbling. Allow to cool for 10 minutes. Serve warm and top with your favorite ice cream for an extra treat.

Blueberry & Peach Crumble
Ingredients
Fruit
- 2 Peaches
- 1 cup of Blueberries
- 1-2 tsp lemon zest
- 1 tsp Lemon Juice
- 1 tbs flour
- 1 tbs sugar
Crumble
- 1 c Flour
- 1/2 c Sugar
- 1/4 c Brown Sugar
- 1/2 tsp Salt
- 1 Stick of Butter (Cold & Cubed)
Instructions
- Preheat oven to 350.
- Mix gently the peaches, blueberries, lemon zest, lemon juice, flour and sugar together in a medium sized bowl. Set aside for a few minutes. Spoon fruit mixture into a baking dish.
- In a mixer fitted with a paddle attachment: add flour, granulated sugar, brown sugar, salt and butter. Mix on low speed until topping incorporates into small marble sized lumps.
- With your hands, mix the crumble into bigger pieces and sprinkle over the fruit.
- Bake for 35-40 minutes until the top is browned and the juices are bubbling. Allow to cool for 10 minutes. Serve warm and top with your favorite ice cream for an extra treat.
